Vegetable Marinades, Bastes, Oils, and Sauces

Vegetables can be marinated with delicious results as the more fibrous vegetables take on the subtle flavor of the marinade. An interesting sweet marinade can transform fruits. Tempeh and tofu get their very identity from whatever flavors them.

 

Our recipes work well with vegetarian foods for the grill and are for basic marinades, bastes, and oils. They are meant as basic palettes to which flavor and color can be added. Marinate most vegetables for 30 minutes at room temperature or 1 hour in the refrigerator. Any longer will make them mushy. Since most vegetables do not have tough fibers that need breaking down the acidic element in these marinades is used as a flavor booster rather than a tenderizer. Vegetables can marinate in bastes and oils or these can be brushed on just before grilling.
