ROAST FOILED CHICKEN

Ingredients:

4 boneless, skinless chicken breast halves
1/2 cup bottled barbecue sauce
1 white onion, sliced
1 doz small red potatoes, thinly sliced
1 red bell pepper, thinly sliced
Kosher salt
Freshly ground black pepper

Directions:

Spoon about a tablespoon of barbecue sauce onto a large square of aluminum foil and place a chicken breast half on top of the sauce. Repeat for other three breast halves. Place the onion, potato, and red pepper slices on top of the chicken. Sprinkle with salt and pepper to taste. Spoon the additional sauce on top of the chicken and vegetables. Fold the foil into individual packets and seal the edges tightly. Grill for about 45 to 50 minutes, or until chicken loses its pink color and the vegetables are tender.
