ROASTED LAMB KEBABS

Ingredients:

2 small onions, grated
1 cup olive oil,divided
1 1/4 tsp freshly ground black pepper
2 tsp minced fresh thyme
1 tsp ground cumin
2-lb cubed lamb meat
1 red onion, cut into 1-inch squares
2 tomatoes, cored and halved
2 red bell peppers, seeded nad cut into squares
Kosher salt

Directions:

In a glass or stainless steel bowl, combine grated onions, 3/4 cup olive oil, 1 teaspoon black pepper, thyme, cinnamon, and cumin. Mix well. Add lamb cubes, and stir to coat evenly. Cover and marinadein refrigerator overnight.

Remove lamb cubes from the marinade, reserving the marinade. Alternately thread lamb and onion pieces loosely onto metal skewers. Brush the lamb and onion pieces with olive oil and sprinkle with salt and black pepper.

Grill lamb and onion skewers about 10 minutes, turning once and basting  with marinade. Grill tomato and pepper skewers for the last 5 minutes of cooking, turning occasionally. Serves 4-6.
