GRILLED MOOSE STEAKS

Ingredients:

2 moose sirloin steaks, about 1lb each, 1-inch thick, trimmed of all fat and connective tissue
Salt to taste
ground black pepper to taste
¾ cup extra-virgin olive oil
16 green olives, sliced in half lengthwise, for garnish

Directions:

1. Preheat  the grill for about 20 minutes. The grill should be hot enough that you cannot hold your hand over it for more than 3-4 seconds. When grill is ready, oil the grill plate.

2. Place the steaks on the hot grill and cook  5-7 minutes each side. Season with salt and pepper while on the grill. While the steak is cooking the last minute or so, carefully drizzle a little olive oil on top of the steaks. Be careful of any flare-ups from the grill. Remove with tongs and set on a platter, drizzle the remaining oil on the steaks and let sit for a few minutes to let the juices set evenly throughout the meat. Cut the steaks in half and plate them with olives as garnish.
