SMOKED LAMB
Ingredients: 3-4 lbs section of a leg of lamb Directions: The whole thing is pretty simple; it just takes some time. Place your lamb on a platter and sprinkle it liberally all over with the peppery lamb rub. Let it sit for at least a half hour, and more won't hurt a bit ( but if you're letting it sit for a while, you'll want to refrigerate it). Start your grill, and set it up for indirect cooking. Put a drip pan under the unlit side of the grill, and place the lamb over it. Close the grill. Smoke your lamb for about 2 hours or until a meat thermometer registers 160F-170F (75C-80C). Let the lamb sit for 20 minutes before carving. Carbohydrates: 3 grams
