LAMB BURGERS WITH FETA

Ingredients:

1 1/2 lbs lean ground lamb or beef
2 1/8 tsp fresh ground black pepper
4 kaiser rolls, split
4 lettuce leaves
1/2 cup crumbled feta cheese (2 oz )
4 tomato slices
1 tbsp snipped fresh mint

Directions:

1. Lightly grease or coat with nonstick cooking spray the rack of an indoor electric grill. Preheat grill.

2. Shape lamb into four 3/4-inch-thick patties. Sprinkle pepper evenly onto patties. Place patties on grill rack. If using a covered grill, close lid. Grill patties until meat is no longer pink and  an instant-read thermometer inserted in centers registers 160F. For a covered grill, allow 5 to 7 minutes.  For an uncovered grill, allow 14 to 18 minutes, turning once halfway through grilling.

3. Serve patties on kaiser rolls;top each with a lettuce leaf, feta cheese, a tomato slice, and fresh mint.
