White Wine Marinade

1 cup

This basic wine marinade can be used for most vegetables. Use half the oil for fruit. It is not recommended for tofu or tempeh.

3/4 cup good white wine
1/3 cup olive oil
1/2 a small onion, sliced into rings
1/2 cup fresh squeezed lemon juice
1 tablespoon lemon zest
1 heaping tablespoon chopped fresh herbs such as tarragon,
basil, sage, oregano, or marjoram, or 1 teaspoon dried herbs
Several parsley sprigs
Several grindings fresh black pepper

Combine all the ingredients. Marinate vegetables for 30 minutes at room temperature, or 1 hour in the refrigerator.
