GRILLING VEGETABLES

Dreamed of cooking those fresh garden varieties from garden to grill? Look no further for easy to follow directions on how to maximize your vegetable power while bringing out flavor and texture using your gas grill.

Preheat grill for 10 minutes Cook with hood closed

Yams
4, 8-12ozs each, serves four
Wash and prick yams with a fork. Wrap each one in tin foil. Bake on the upper cooking rack on medium for 45-60 minutes.

Boiled Potatoes
2lbs, serves 4-6
Wash and peel potatoes. Use a grill safe dish and put potatoes, water to cover potatoes and 2 teaspoons of salt. Cover the dish. Remove cooking grid. Place the dish on lava rock grate. Arrange rocks around dish. Cook on high until the water boils, then turn on low for 15

Bakes Potatoes 4, 8ozs, serves 4 Brush with vegetable oil. Prick with a fork and wrap in tin foil. Bake on the upper cooking rack on medium for 45-60 minutes. You can omit the foil for a crispier potato.

Carrots
1-1 ½ lbs, serves 4-6
Cut 2" pieces Wrap or place in grill safe dish. Add 2 tablespoons of butter, 2 ice cubes, and ½ teaspoon of dill weed. Cook on medium for 20-25 minutes.

Acorn Squash
2 whole, 1-1 ½ lbs, serves 4
Cut in half, removing the seeds. Mix together, ½ teaspoon of pepper, ½ cup of brown sugar, 4 tablespoons of butter, 1 teaspoon of cinnamon, ¼ teaspoon of nutmeg. Place on ¼ of mixture in each half and wrap tightly. Cook on medium for 25-35 minutes.

Green Beans
1lb, serves 4-6
Snap off ends. Wrap or place in casserole dish with a top. Add 4 ice cubes and 2 tablespoons of slivered almonds. Cook on medium for 20-25 minutes.

Asparagus
1lb, serves 4-6
Remove ends. Wrap or place in casserole dish with a top. Add two ice-cubes with two tablespoons of butter. Cook on medium for 15-20 minutes.

Cauliflower
Whole Head, 2lbs, serves 4-6
Trim outer leaves. Wrap with ice cubes. Grill on medium for 30-35 minutes. Once grilled, top with American cheese or any cheese of your choice and let stand covered for 2 minutes.

Mushrooms
8ozs, sliced or whole, serves 3-4
Wrap or place in casserole dish with 2 teaspoons dry red wine, pinch of salt and pepper, and 1 tablespoon of butter. Cook on medium for 8-10 minutes.

Corn On The Cob
4 ears
Peel back the husk but do not remove. Tie husks in place at end of the ear and soak in cold water for 10-15 minutes. Cook on medium for 25 minutes turning a few times.

Onions
2 onions, 8ozs, serves 4
Peel and cut onion in half. Sprinkle with fennel seed and seasoned salt. Put 1 tablespoon butter on top and wrap. Cook on medium for 20-25 minutes.
